The Rooster Cart: Open for Business


I had quite a refreshing lunch break today at the Rooster Cart over by Bandito's & Black Hand Coffee. The owners of the former Cafe Gutenberg (now, Arcadia) have started the all vegan cuisine food cart called the Rooster Cart. They are currently serving a number of sandwiches, including the Mock Duck Rooster sandwich and Tofu Bahn Mi (classic Vietnamese street food). Rice bowls and vegan sweet pea mac and cheese were also on the menu today.

The sibling owners, Jen Mindell and Luke Mindell, hope to have the Rooster Cart open for business in the VCU area and eventually downtown.  Today and most of this week though, they are set up in the parking lot behind Bandito's Burrito Lounge from 12p - 3p. The service was warm and the food was incredible. I will definitely be tracking down the Rooster Cart on a regular basis. Follow them on Facebook to get updates on where they'll be posted up each day.

It's exciting to see more creativity in the food cart world of Richmond. Washington DC has managed to make a lifestyle out of food carts and it's fascinating to say the least. Start up costs are nothing compared to an actual restaurant and customer loyalty and business at most carts seems to be booming. Can't wait to see what other local carts will pop up this summer and beyond.
